  • The philosophy at SALT is simple. We believe in humane animal husbandry and the Farm to Fork movement. Farm to Fork ensures the shortest distance from farm to table. It doesn’t have to be sprayed with chemicals to protect it for the long haul to the restaurant. Our beef is raised in pastures and never goes to feedlots. Visit our sister restaurant Colterra Food and Wine in pastoral Niwot to sample a taste from our gardens, and come sit at our table.

    The staff at SALT have made a commitment to use Boulder County product whenever possible. We are fortunate to have a wealth of abundant and diverse resources here and rich farm country around us. The Farmers Market, held every Wednesday and Saturday, brings the community together and you will see much of the produce found there featured on our menu that evening. We are thankful for the hard work and dedication of these farmers and their families.
